BASES - Many Choices
There are three kinds of bases: gelato; sherbet and sorbet.(regular or sugar free). Gelato is a milk-based product, sherbet has a little vegetable fat in it and sorbet is fruit ice with no fat. All bases are formulated for the tropics and have a higher melting point than Italian bases made for temperate climates.
Gelato powdered milk base : For quality, consistency and safety we use New Zealand whole milk powder, mixed with sugar, flavorings and stabilizers. Different gelato bases all contain slightly different ingredients to produce different flavors.
Gelato fresh milk base: The same as our powdered milk base but you add your own fresh milk and sugar. In countries with inexpensive milk this may save you money.
NEW! a low fat non-animal product soy-base designed to simulate whole milk formula gelato base. It is suitable for consumption by vegetarians, vegans, lactose intolerant or milk intolerant customers. Superb!
Sherbet base : is entirely vegetable based and contains soy and vegetable fiber to add body to the product. Since less fat yields more taste, sherbet is more intensely flavored that gelato but also lighter than gelato, also because there is no milk fat in it.
Sorbet : is fruit ice, containing no fat. It is 85% fruit, fruit pulp, natural syrup, fruit fibers and sugar. It is intensely flavored, sharp to the tongue and very refreshing.
HOT or COLD mix : All of our bases are available with either hot mix or cold mix emulsifiers. Cold mixes are sometimes preferred for use in small operations. To use a cold base mix, just add to cold water or cold pasteurized milk and stir. This is very convenient but the texture of the ice cream is not quite as good as hot mixes. To overcome this problem, add heavy whipping cream.
