BASIC PROCEDURES
The products we manufacture are: gelato, sherbet and sorbets. Gelato is a low-fat ice cream made from sugar, milk, vegetable fat and flavoring. Sherbet is similar to gelato but it is an all-vegetable product. There is no milk in it. Sorbet is fruit-ice, containing sugar, flavoring, fruit fibers but its main ingredient is lots of fruit and fruit juice.
All are similar in that they are made with a pre-formulated, powdered base to which water is added. Making the base and flavorings is a very technical process but you won't have to do that. We do that for you.
The mix is then pasteurized, aged and finally poured into the batch freezer along with flavors. Each batch takes about 10 minutes to make. In some cases more flavors, fruit, chocolate chips or nuts are added a minute before the finish.
As the semi-hard product is extruded from the machine, fruit pastes and other confections are often swirled into the mix. When the tub is almost full, product is arranged in a decorative way and toppings are added for extra eye-appeal.
After that the tub goes into the blast freezer to harden it. By the next day it is hard as a rock and ready to sell. |
