What is Gelato?

Our GelatoGelato is very different from other ice creams. It is softer, more intensely flavored and colored than typical ice cream. Premium ice cream is made from cream. It contains 18-24% fat and 50% air. The fat acts as an emulsifier and preservative, but fat masks flavor, so flavors in ordinary ice cream tend to be bland.

Gelato, which is made from milk, contains 4-6% fat, or as much as 75% less fat than ordinary premium ice cream. Because there is so little fat, natural flavors are much more intense. Gelato's rich, creamy texture is achieved by trapping very little air—just 10%.

Gelato is actually “real” food, not “junk” food. It contains 10% protein, milk minerals and natural vitamins. In addition, the huge quantities of fruit in our gelato are NEVER boiled. They are simmered below boiling temperature for many hours to retain all of their flavor and food value.

Sugar-free gelato is made using Maltitole, a carbohydrate extracted from tapioca. It is a natural product. It has the same flavor as sugar but 40% less calories.

Sorbet is a non-fat ice made with huge quantities of fresh fruit, natural fruit flavors. It is hard to imagine how much fruit actually goes into a good sorbet. For example, in one tub of apple sorbet there is 1½ tubs of apples! Sorbets are less sweet-tasting than gelato and have a rich, fresh fruit flavor.

Our GelatoSafety: Ice cream is a non-cooked food, but it is pasteurized, like milk. We have our own water filtration plant and store the ready-to-use water at 78°C. prior to use. The powders used in our base are all certified as bacteria-free, but we pasteurize the mixture anyway. Since we use NO PRESERVATIVES, this is important. People have asked us “how long does it keep?” And we always reply, “We don't know, it gets eaten so fast!”

Our gelato is “home made” . It is made one tub at a time and each tub is both delicious and a work of art. The extracts and aromas are imported from Italy and the preparation is supervised by a Paris-trained chef. We claim our gelato is the best ice cream you ever ate. Try it and see!
