We have always recommended that new franchisees try to start their gelato business in a mall for several reasons.  First, ice cream is an impulse product, so walk-by is an important element of boosting sales.  Second, malls usually stay open until at least 10 p.m. and evenings are an important time for ice cream sales.  Also, people visit malls whether it is hot, cold or raining outside.  Malls are not just a place to go and buy stuff-they are an entertainment source. Young people tend to hang out in malls, where they can meet their friends.  Mothers usually take children to malls and they account for a disproportionate number of ice cream purchases.

In many cases shop space becomes available in malls and there are some advantages to having a shop.  But in many cases shop space is not available but walkway space for a kiosk is.  Another advantage of a kiosk is that it can be moved.  Sometimes the best space is not available but the mall manager may agree to let you move when a better one opens up.
